What are the "must see" things around town? Best spots to eat? Best spots to buy OU merch? I've only been to Norman twice to watch a game and both times were just to the stadium and back.

Upstairs at Ryan Broyles' The Porch has a nice view over the south oval. Can get a beer or cocktail there. The Mont is not bad. Almost anyplace will be crowded on game day. Switzer Center and Heisman park are probably better on a random, off day, but should be seen sometime.
like cush was saying, it might depend on the length of the visit. Switzer Center is only open on weekdays, if I'm not mistaken, so if someone was showing up the Thursday or Friday before the game... that would be something I'd recommend.
The Mont is always my go-to place, but I'm not sure if it's because it's great or if it's just because I have nostalgic ties to it. Still, it's worth going in to get a swirl, just to say you've done it.
Pub W is on the Northwest side or Norman (not walking distance for a game) and I highly recommend it. There's also a good sushi place (Volcano Sushi) in that same shopping center along with a Louie's. There's a bunch of chain type places out on 24th, north or Robinson. They're building up that area with more and more stuff all the time. I don't really LOVE anything out there, but if you wanted some familiar variety (Chili's/PeiWei/5 Guys) then that's a place to go.
To buy merchandise... There's the bookstore that has lots of great stuff, on the west side of the stadium. There's a place on Campus Corner (University and Boyd maybe?) that is an "official sports wear" place. Then there's a big fan shop on 36th and Main street, that you could hit up on your way back from Pub W.
